Here’s an easy recipe with a phenomenal nutritional profile.

Steamed Veggies and Eggs

Prep time: 10 minutes

Macros:
Calories 350kc
Protein 19g
Carbs 27g
Fat 11g
1c Fresh mushrooms
1c Frozen Brussel Sprouts
.5c Fresh or Frozen Green Peas
2 Eggs
Pink himalayan sea salt
Fresh ground black pepper

-Steam the mushrooms, brussels sprouts and peas on the stovetop.

Steam: Bring 1 cup of water to a boil in a pan. Add the vegetables and cover. Allow the steam to cook the vegetables for a few minutes, testing them periodically with a fork for doneness.

-Prepare your eggs in your favorite way; over easy, over hard, sunny side up or scrambled. Use a half tablespoon of coconut oil on medium heat.

Plate your vegetables first, then place the eggs on top. Season with fresh ground black pepper and sea salt to taste.

This dish contains a variety of vitamins including Vitamin B’s from the mushrooms. Brussel sprouts provide calcium, Vitamin K & Vitamin C. Peas offer fiber, Vitamin K and Vitamin B’s, while eggs provide calcium, Vitamin D and B12.
