Spring Salad with Steamed Vegetables and Chicken

2cups spring mix lettuce
1cup fredh or frozen green beans
.5 cup fresh or frozen green peas
4 lightly steamed garlic cloves
1 baked skinless chicken breast
3/4 cup pinto beans
5 kalamata olives, chopped
Organic sesame seeds
.5 lemon, fresh squeezed juice
your favorite red pepper hot sauce
fresh ground sea salt
fresh ground black pepper

 

Salads are so easy to make and you can combine almost anything that is in your fridge, freezer or pantry.

Steam green beans and peas on the stovetop

Steam: Bring 1 cup of water to a boil in a pan. Add the vegetables and cover. Allow the steam to cook the vegetables for a few minutes, testing them periodically with a fork for doneness (almost all water will have evaporated). When they have about two minutes left, add the raw garlic cloves and let them steam for the remaining minutes.

In a large salad bowl, first line it with the spring mix lettuce, then gently add the other ingredients on top: steamed green beans, peas, garlic cloves, chopped olives & pinto beans.

Separately, dust the chicken breast with your favorite red pepper sauce. Thinly slice it and place on top of the salad. Squeeze fresh juice of half a lemon over the greens. Season with a dash of ground salt and fresh ground pepper. Garnish with sesame seeds. Enjoy!
